每天半塊豆腐防心血管病
   “每天至少保證吃半塊豆腐,就可以有效地預防心血管疾病?!边@是中國農業大學食品科學與營養工程學院李里特教授早日前在接受采訪時闡述的觀點。
大量臨床研究表明,每天只要至少攝取25克以上大豆蛋白,就可以降低血液中的膽固醇含量,有效預防心血管病。那么,如果按照每天食用25克以上大豆蛋白,從而發揮其保健功能來推算,每人每天應該食用多少豆制品呢?
   “每天至少吃半塊豆腐?!崩罱淌谡f:“豆腐、豆漿的主要營養不亞于牛奶,豆腐的蛋白質和鈣的濃度甚至高于牛奶,而含鐵量是牛奶的10-20倍以上。特別是豆腐中的鈣和鐵,具有較高的吸收率,加上大豆蛋白的降低鈣排泄作用,因此,大豆食品是具有補鈣、預防骨質疏松等功能的保健食品,比起牛奶和其他補鈣藥,班會和豆漿的價格卻便宜得多。另外,與吃肉和喝牛奶相比,豆腐和豆漿等豆制品膽固醇含量幾乎為零。因此,不少營養學家稱豆制品為物美價廉的******保健食品。
